How We Made Them
Here’s the simple, kid-friendly way we put these muffins together:
1. Mix the dry ingredients
- Oat flour
- Rolled oats
- Protein powder- 1st Phorm Level-1 Iced Oatmeal Cookie (affiliate link)
- Baking powder
- Cinnamon
- Nutmeg
- A pinch of salt
2. Mix the wet ingredients
- Milk (we used almond, but any will work)
- Honey (instead of maple syrup)
- Olive oil (instead of coconut oil)
- Eggs
- Vanilla
My daughter helped whisk this part. Messy, but absolutely adorable.
3. Combine everything
Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Prep the muffin tin
This was my daughter’s proud moment: carefully lining every muffin cup.
5. Add the crumb topping
Mix together:
- Oat flour
- Brown sugar
- Cinnamon
- Softened butter (we used olive oil)
Sprinkle over each muffin for a delicious, cinnamon-sugar crunch.
6. Bake
- 400°F for 10–12 minutes, until lightly golden on top.
- Let them cool… then enjoy!
